Two Great Mediterranean Dishes For Your Next Dinner

Goat cheese is one of the most underrated ingredients in great dishes. This cheese, which is often called Feta, gives a wonderfully creamy, tangy flavor to any food. Here are 2 great dishes that will be taken up a notch by using Feta cheese.

Greek Salad

  • 4 ripe roma tomatoes
  • 2 cucumbers
  • 2 green bell peppers
  • 1 sweet onion
  • 8 ounces of Feta cheese
  • 1/2 cup of extra virgin olive oil
  • fresh ground black pepper
  • kosher salt

Cut the tomatoes in 8 slices. Slice the cucumbers into thin slices and combine them with the tomato slices. Slice the onion into thin rings, then slice the rings into quarters. Slice the bell peppers into 8 slices, then cut each slice in half. Add the bell peppers and onion to the tomatoes and cucumbers. Finally, cut the Feta cheese into 1 inch square cubes and add this to the salad.

Pour a high quality extra virgin olive oil on top of the salad. Because olive oil is the dressing for this salad, you want to make sure that you use a top quality extra virgin olive oil. Use a brand that has less than .5% acidity and that has been harvested within the past year. When you smell the oil, it should have a distinctive fruity odor. 

Toss the salad and then serve immediately. 

Spaghetti and Feta with Sausage

  • 8 ounces of spaghetti noodles
  • 14 ounces of diced tomatoes
  • 4 cups of beef broth
  • 1 onion, chopped and quartered
  • 2 cloves of garlic
  • 1/4 teaspoon of red pepper flakes
  • 2 tablespoons of fresh basil
  • 1 tablespoon of fresh oregano
  • 8 ounces of Feta cheese crumbles
  • 3 large Italian sausage links

Combine the beef broth, onion, tomatoes, garlic, red pepper, basil, oregano, and spaghetti noodles. Allow it to cook, covered for 10 minutes. While the spaghetti is cooking, pan fry the sausage links in a tablespoon of butter. Once the sausage is cooked through and has a nice crust on it, take it off the heat and set it aside. 

Pull the spaghetti from the broth, taking the onions and tomatoes with it. When the sausage is cooked, combine it with the spaghetti and serve it immediately. Top the spaghetti with the Feta cheese crumbles.
